Who needs coffee when you have Matcha pralines
Always on the lookout for new recipes that use tea as an ingredient or a main component, I came across a recipe that I modified due to a lack of ingredients and adapted to what I had on hand. For these tasty pralines, I used spelt as the healthiest of all grains, local walnuts, and homemade chestnut honey.
Spelt Pralines with Matcha Powder
Ingredients (for about delicious 16 pralines):
- 1 cup (100 g) ground almonds
- 1 1/3 cups (130 g) spelt flour or ground spelt flakes
- 2 tablespoons raw honey
- 2 tablespoons melted coconut oil
- 6 tablespoons (50 g) walnuts
- 4 teaspoons of matcha green tea powder
Got all the ingredients? Here’s what to do next:
Put the ground almonds, spelt flour (or ground spelt flakes), honey, coconut oil, and just 2 teaspoons of matcha powder in a bowl, then mix until you get a sticky green dough. Roll this sticky mixture into bite-sized balls (if it were up to me, they could be the size of tennis balls, and their color is similar... maybe not a good idea, my bulldog might mistake them for his ball).
Place the remaining matcha powder in a plastic bag, add the balls one at a time, and shake until they are thoroughly coated with the green powder (like a lottery; the balls will definitely be a JACKPOT).
Store in a tightly sealed container in the fridge for up to a week (mine never last that long).
You can use any type of walnuts, choose the ones you like best or the ones you have on hand. I used plain local ones, but you can use Brazilian, Australian, or macadamia nuts. Instead of spelt flour or ground spelt flakes, you can use oat flour or ground oats.
Whatever nuts, honey, and flour/flakes you use, the pralines are delicious, healthy, and can really keep you awake, I’d say even better than coffee. Coffee acts intensely and briefly, while these pralines, thanks to matcha, have a milder but strong enough effect to keep you awake, calm, and focused for a longer period.

Instead of matcha tea, you can use cocoa powder or combine: put matcha in the mixture and roll them in cocoa... or vice versa. All combinations are excellent.
